Herb Roasted Chicken
A perfectly tender, flavorful meal. Feeds our whole family!


Herb Roasted Chicken

1 3-4.5 lb whole chicken
1 Tbs. Smoked Paprika
1 Tbs. Oregano
1 Tsp. Salt
1/2 Tsp. Freshly Ground Pepper
1/2 Onion Powder
1/2 stick (1/4 Cup) Butter, Softened
1/8-1/4 Cup Chicken Broth


1. Preheat oven to 350. 
2. In a medium sized bowl, mix together all of the spices
3. Dry your bird with a paper towel (this allows you to spread the butter without it slipping off)
4. Using your hands (yes your hands), spread the butter over the entire chicken
5. Sprinkle the herb mixture over the chicken. Make sure you turn the bird over to get all the nooks and crannies
6. Place in a roasting pan
7. Pour the chicken broth into the base of the roasting pan
8. Bake at 350 for 45 min. or until the skin starts to brown
9. Remove from oven, cover with foil and return to oven.  Reduce the heat to 180 and bake from 2 hours. 
10. Remove from oven and let rest for 10 min
